Hey beautiful people! This week we made some delicious Quinoa shiz (Sorry, I’m not very creative with names), baked tortilla triangles with salsa and guacamole, and pineapple cake! It was really tempting to put pineapple in everything, because pineapple is just awesome. I recommend putting pineapple chunks in the Quinoa AND salsa. YUMMMMM.  Oh yeah, next week is our LAST Rabbit Hole Cafe lunch for the semester. Be sure to come, because it’s going to be EPIC.

“Quinoa shiz”: These are the ingredients we used, but use whatever you have on hand. Be creative!

Quinoa, broccoli and bell peppers, garlic, onion, chickpeas, black beans, canned diced tomatoes, salt, paprika, cayenne, chili powder.

Cook the quinoa and sauté the broccoli, bell peppers, garlic, and onions. After everything is cooked, mix the quinoa with the vegetables. Drain the chickpeas, beans, and tomatoes and toss in with quinoa mixture. Sprinkle in the salt, paprika, cayenne, and chili powder.

Guacamole: Avocado, garlic, salt, fresh limes, cilantro

Mash the avocado with some minced garlic. Season to taste with salt. Add a squeeze of lime juice and stir in roughly chopped cilantro.

Salsa: Mix together some canned diced tomatoes or fresh tomatoes, diced bell peppers, minced garlic, salt, cilantro, hot sauce or cayenne powder.  You can add in some pineapple or mango chunks for a sweet twist!

Baked tortilla triangles: Cut tortillas into triangles, lay them out on a baking sheet preheated at 500 degrees F, and bake until crispy and slightly golden. Keep an eye on them so that they don’t burn!

Pineapple cake:

2cups All purpose flour
3/4cup Sugar
1/2cup Canola oil
1cup Pineapple Juice
1tbsp Vinegar
1tsp Baking Soda
1tsp Vanilla extract
1cup Pineapple pieces
2tbsp Powdered sugar

Whisk sugar, canola oil, pineapple juice together until the sugar gets dissolved, mix together all purpose flour, baking soda n keep aside…now add the vinegar, vanilla extract to the whisked oil n sugar mixture, mix everything together, gradually add the flour with baking soda and beat everything until they turns a smooth batter, add the pineapple pieces i used the canned one, can also use fresh pineapple pieces…mix again everything n keep aside…Preheat the oven at 350F..

Grease a cake mould, pour the cake batter n bake them in middle rack for 30 minutes..Let them get cooled, before serving springle few powdered sugar over the cake.
